Food Bank Recipes: Extra Easy Casserole

Though you need an oven to make this dish, it makes a lot of food that can feed a family or get portioned and frozen to make several meals. Filling and yummy, this is a super simple recipe that should please everyone, and would be easy to adapt for gluten sensitivities, vegetarians, restricted salt or low-fat diets and more. You can prepare it the night before and pop it in the oven after work and/or when the kids get home. My kind of meal.

Extra Easy Casserole

Prep time: 20 minutes
Cook time: about an hour

Preheat oven to 325 F (160 C)

Ingredients:

4-5 cups cooked macaroni (about 2 cups dry)

1 small can creamed corn

1 small can diced tomatoes with juice

1 can mushroom soup (or reconstituted mushroom soup powder)

pepper to taste

1 1/2 cups shredded cheese

1 1/2 cups ground beef

1/2 diced onion

Directions:

Cook and drain pasta.

Brown beef and onions in skillet over medium heat.

Mix all ingredients, except for cheese, together in a large bowl.

Spoon or pour mixture into a casserole dish or large baking pan.

Sprinkle cheese on top of mixture.

Bake for about an hour (every oven is a bit different, so check on your casserole at the 45 minute mark).

Try gluten-free macaroni, low-salt onion soup, ground chicken or tofu for variations on this delicious dish. Use up some of the veggies in the fridge to add a nutritional boost!
